Your mold arrives ready to work — here’s how the pros use silicone molds for each kind of casting. Wash with warm soapy water and dry before the first use, then pick your lane below.

Chocolate

  1. Polish the cavity gently with a dry cotton ball — this is the single biggest trick for glossy chocolate.
  2. Temper your chocolate (or use candy melts, which don’t need tempering). Tempered chocolate gives the shine and the snap.
  3. Pour, then tap the mold on the counter 5–6 times to release air bubbles — bubbles love detailed corners. For intricate designs, a vibrating surface for 30–45 seconds works even better.
  4. Scrape the top flat with an offset spatula.
  5. Refrigerate 15–20 minutes. Don’t rush it — too soft and it breaks on the way out. Avoid long freezer stints: condensation fogs the finish as the candy warms back up.
  6. Let the mold sit at room temperature for a moment, then flex — never pry — and the pieces drop out.

Mousse cakes & frozen desserts — the freeze-first rule

This is the technique behind every shiny entremet you’ve seen online, and the part nobody tells beginners: the cake comes out of the mold frozen, not chilled.

  1. Build your layers straight in the mold — mousse first (it becomes the outside), then inserts, then the cake base. Press out air pockets against the detailed surfaces.
  2. Freeze solid: at least 4 hours, overnight is better. A frozen-solid dessert releases cleanly and holds every detail; a merely-cold one tears.
  3. Unmold while frozen, straight onto a cardboard round, and back into the freezer until you’re ready to finish it.
  4. Glazing? Mirror glaze goes over the still-frozen cake at 86–95 °F — fluid enough to flow, cool enough not to melt the mousse. Set the cake on a rack over a tray and pour.
  5. Thaw in the fridge 2–4 hours before serving. The freeze was for the release and the glaze; the thaw brings back the texture.

Baking in silicone

  • Put the mold on a sheet pan before filling. Silicone is floppy when full — the pan is your handle and your insurance.
  • We recommend a light grease before baking, though it isn’t strictly necessary — silicone is naturally nonstick. It helps most for very intricate cavities or low-fat batters.
  • Fill cavities about 2/3 to 3/4 — detailed shapes distort when overfilled.
  • Silicone conducts heat differently than metal: start checking a few minutes early with a toothpick.
  • Cool 5–10 minutes, peel the mold edges away from the bake, then invert and flex. Never cut anything out of a mold.

Gummies & candy

  • Fill with a squeeze bottle or dropper — slow and slightly under the rim, so you don’t trap air or distort edges.
  • Set in the fridge until fully firm.
  • Sticking? Dust cavities with a whisper of cornstarch before filling.
  • After unmolding, toss gummies in cornstarch (or 1:1 cornstarch and powdered sugar) so they don’t clump — it gives that classic frosted matte finish.
  • Still tacky? They need to cure — leave them uncovered in the fridge overnight.

Ice

Fill on a level freezer shelf (carry the mold on a small tray). Once frozen solid, a gentle twist and flex releases the shape. For clearer ice, use boiled-then-cooled water.

Soap, candles, plaster & resin

  • Melt-and-pour soap and candle wax both pour comfortably within the mold’s temperature range. Let them cool fully before flexing out.
  • Plaster and concrete: no release agent needed; tap to settle out bubbles; let it cure hard before demolding.
  • Epoxy resin casts beautifully in silicone — but the one-lane rule is absolute: once a mold touches resin, it never touches food again. Order a second copy of your design for the food side; reorders are cheap because we keep your tooling.

Surface finish — making fine texture disappear

Molds are tooling, and every tool leaves its fingerprint: silicone copies whatever it cures against, down to very fine 3D-printing lines. The good news is that the finishing steps below are things pastry kitchens and casting studios do anyway — they are how the craft works, not a fix for a flaw. Pick the one that suits what you are making.

Start here: silicone is matte by nature

Silicone is flexible, so it makes soft contact as your casting cools — the finish comes out matte. That is why fine lines rarely read on a silicone-cast piece in the first place, and it is also why the mirror-gloss snap you see on boxed chocolate comes from rigid molds instead. If gloss is the goal, our plastic pouring trays are the rigid lane, and everything below still applies.

Chocolate: polish the cavity, temper properly

  • Buff each cavity with a dry cotton ball before you pour. Confectioners do this on every mold they own; it lifts dust and is the single biggest lever on how the surface reads.
  • Temper (or use candy melts, which do not need it). Tempering is what produces shine and snap — an untempered bar looks dull no matter how good the mold is.
  • If you want a glass finish, cast in the rigid tray rather than silicone, and let the piece release on its own rather than flexing it out warm.

Velvet spray: the one that hides everything

A sprayed cocoa-butter coat gives a fine, suede-like nap that covers surface texture completely. It is the standard finish on entremets and it is not difficult, but it is a temperature trick, not a technique trick:

  • The piece must be frozen hard, around −18 °C, and the spray hot, 45–50 °C. The velvet comes from that thermal shock — a cold spray or a merely chilled cake gives you a smooth painted layer instead.
  • Typical mix is roughly 60% chocolate to 40% cocoa butter (equal parts also works, depending on the recipe you follow).
  • Spray thin, even passes from 15–30 cm. Thick coats peel.

Mirror glaze: gorgeous, but read this first

Mirror glaze poured over a frozen entremet sets almost instantly into a glass-smooth, reflective layer, and it will absolutely take the finest surface texture out of view. What it will not do is hide a defect. The glaze is a thin coat that follows the shape underneath, and every pastry source says the same thing: imperfections telegraph straight through it. If you can catch it with a fingernail, glaze will show it. So glaze because you want a mirror, not as a repair — and remember the surface it wants is a mousse frozen solid in the mold, which is the smoothest surface you can give it anyway.

Dusting and coatings: the easy ones

  • Cocoa powder dusts to a clean matte finish and is the classic for chocolate desserts.
  • Luster dust (mica-based) adds a metallic or pearl sheen that breaks up fine lines while it catches light.
  • Gummies: toss in equal parts cornstarch and powdered sugar straight after unmolding. It absorbs surface moisture, stops them sticking, and leaves a frosted matte finish.
  • Buttercream, ganache or fondant makes the whole question moot — nothing of the mold surface survives a coating.

Soap, candles and resin: sand and polish

  • Wet-sand up through the grits — start around 120 where you need to remove something real, then step up to 2000 or finer. Skipping grits is what leaves scratches you can see.
  • Follow with a polishing compound on a soft cloth for high gloss. Car polish works.
  • Or flood the surface with a very thin fresh resin coat — less than you think, or it drips — or a water-based polyurethane for gloss without more resin.
  • Want matte instead? Wet-sand, then wax and buff to exactly the sheen you want. A deliberately matte or textured finish is a look, not a compromise.

One rule outranks all of this: keep each mold to one lane. Once a mold has cast resin, soap or candle wax, retire it from food work permanently.
